PunchFork

Have you guys seen PunchFork? As soon as I saw it I thought of my little sister because not only does is it an archive of the newest recipes to hit the web from all of the best cooking blogs, sites, and magazines- but it is meticulously manicured and well-organized. This site tracks the mentions and publicity that new recipes are getting from facebook, blogs, tweets, and other social media sources and then gives them a rating number based on their popularity. You can see the photos, descriptions, ingredients, and rating and then link over to the original source for any recipe you wish to make. It seems to be updated frequently and has become a constant source of inspiration for my own (not always so creative) cooking over the last couple of weeks.
So far I have made the summer squash soup, and pea pesto linguine. I think next on my radar are the eggplant caprese, zucchini and spinach gratin, ginger raspberry ice cream, and brioche french toast with asparagus and orange beurre blanc (even though I have absolutely no idea what half of those words are.)

summer salads

Since I spend most of my days during the summer around the house, in the garden, or in the studio- I have the pleasure of eating most of my meals right here at home. That normally means grabbing whatever fresh vegetables, herbs, and other ingredients we have at the house and putting together some sort of salad or sandwich. Since our summer vegetables are quite ready to eat, I am buying local tomatoes and veggies and incorporating our herbs. The past few days I have been chowing on a tomato, mozzarella, and basil salad (simply tossed with some balsamic vinegar and salt&pepper- an easy classic) and a macaroni salad with peas, red onions, and homemade pesto.
For the pesto I used this recipe from Vegetarian Bible: from the earth to the table from Love Food (of Parragon Books Ltd). I didn't really measure anything and used almonds instead of pine nuts (because of cost) and it still came out delicious for the pasta salad.

Pesto Sauce (makes 1/2 cup)
  • 3 cups fresh basil leaves (I mixed two types from our herb garden)
  • 1/2 oz/15 grams pine nuts
  • 1 garlic clove
  • pinch of salt
  • 1/4 cup freshly grated parmesan
  • 3 tbsp extra virgin olive oil
Put the basil leaves, pine nuts, garlic, and salt in a mortar and pound to a paste with a pestle. Transfer to a bowl and with a wooden spoon, gradually work in the parmesan, followed by the oil, to make a thick creamy sauce. Cover and refrigerate until needed.
What I liked about this recipe: no food processor or blender to clean- plus the mortar and pestle is just fun to use.
What I may change: I liked substituting the pine nuts for almonds, but I think I would toast them a little next time.

One of my summer goals is healthy, local, and home-grown eating and I am excited to see what comes from that. Cooking is so trial and error so there are sure to be some duds in the mix, but I am excited to have more time to explore.

saint cupcake


Mrs. Bliss posted the most glorious photos she took of Saint Cupcake Deluxe... a delicious looking bakery and party supply shop in Portland. I seriously think I could live in this place. The colors, patterns, and modern decor are exactly where I want to hangout in the springtime.




And the best part? Mrs. Bliss is hosting a monthly Saint Cupcake giveaway where you can enter to have some of these beauties delivered right to your door. Makes me want to break out some muffin pans and sprinkles this weekend.

the food

Even though the food in the garden isn't quite ready yet (except for some delicious spinach) we have still been enjoying some awesome veggies lately. Two weeks ago I made a roasted vegetable tian with onions, peppers, tomatoes, squash, zuchinni, garlic, parmesan, and breadcrumbs. It was fairly easy and made a great addition to our Thursday night potluck with friends.
Last week for potluck I needed to go super easy and ended up making a big salad and steaming some mini artichokes as an appetizer. I mixed up a couple of dips like garlic butter and a yummy balsamic-mayo topped with rosemary.

rainbow pancakes


I think I need these this morning. Ok I really need to go to the gym this morning- but I would certainly settle for some rainbow pancakes. Have a great weekend! I am looking forward to getting out of this snowed in house and maybe going to the pottery studio for a while.

what we've been up to

Snowed in since Friday night, here is what we have been doing, all while trying to stay sane::

Taking lots of flower pictures in front of the new teal wall.
Having adventures in the snow.
And eating a lot of junk food- including pancakes, grilled cheeses, and all sorts of delicious bad for you-but acceptable in this weather- types of food!

We finally got out of the house yesterday, I've made it to the gym twice now, and the mister went back to work today. I am going to have a million make-up days for work so I better enjoy this time now!

the weekend



It was a wonderful birthday weekend. We celebrated with my family on Friday night, with delicious pizza and chocolate-peanut butter cheesecake. The new kitchen appliances came on Saturday morning (which was only mildly stressful...) then my mom and sisters came over for baking cupcakes and dinner. All of our friends came over for dinner, cupcakes, and champagne and then we all went out for more good times.

And I spent all of yesterday on the couch, recovering and relaxing. It was a pretty great birthday!

keep the food coming


Thanks to this yummy post by Kathleen and this dough recipe, we had some delicious homemade pizza last night. It was a long process, the dough took 24 hours and we didn't end up eating until about 9, but it was worth it! It was delicious, fresh, crispy and not too filling. Too bad I am back at work now and finding time to cook will probably not be happening any time soon. I am not very good at prioritizing between work and exercise and creating and cooking and social time...

liz's broccoli cheddar soup




So much for getting ready to go back to work. Spent the afternoon cooking with my sister and eating what we have cooked. Made some pizza dough that is currently cold-rising to be used tomorrow. Also made some croutons (my new favorite thing to make) while my sister, Liz made some absolutely delicious broccoli cheddar soup. We then sat around and listened to records and ate our soup and croutons! "a pretty nice little saturday". Guess tomorrow will be spent grading and lesson planning... oh well.

Here is the recipe for her soup::

Liz’s broccoli cheddar soup

3 tablespoons butter
1 onion chopped
4 cloves garlic, minced
2 cups broccoli, chopped
2 tablespoons flour
3 cups vegetable stock (I don't like stocks made with tomato, I find them to be too sweet)
3 cups milk
8 oz cheddar
salt and pepper to taste

Melt butter and saute the onion, garlic, and broccoli a few minutes, until onions are becoming translucent. Stir in flour, coating vegetables. Stir in stock and bring to just below a boil. Add milk, and reheat, but do not boil. Slowly stir in cheese until completely melted. This should take several minutes. Salt and pepper to taste. Don't be afraid of the salt. Depending on your stock, it can handle a lot. Serve with homemade croutons.

pumpkin party


I know it is not out of the ordinary for this time of year, but I am currently in love with all things pumpkin. Soups, muffins, lattes, pies, cookies, beer.... you name it I'll consume it. Hope you are cozying up and enjoying the fall weather!

best medicine


Sick day # 3. Day 2 out of work. It is raining, gray, and overall drab around here. The only good news is that the mister has the day off too. So I get to sit around and cuddle in tons of blankets and he is making me a grilled cheese! One of the only things I could eat while feeling this gross. I guess it is also good news that I have had more time to blog. And hopefully I will be feeling better for pottery class tonight!

living on heirloms



I cannot tell you how elated I am that the garden is now here in full force. I am enjoying these cherry and purple cherokee tomatoes with fresh basil almost every lunch and dinner. Along with that we have cucumbers, peppers, squash, eggplant, and a variety of herbs. I also used a few cups of the basil (three different types!) to make a batch of pesto this week. Some fresh and the rest frozen in a heart-shaped ice cube tray, I think it will make many delicious dinners. mmmmmmmm.......
